Banana and Toffee Pie


So the New Year is upon us and maybe your resolution is to give up smoking or to go on a diet. Maybe you don’t have one. So I put it to you to make your New Year’s resolution to spend more time with friends. Here is a no-bake pie recipe that will win the hearts of all your friends.

Banoffee Pie (Banana & Toffee pie)

This is a great pie to make in Korea as the ingredients are cheap and available all year round. You can easily make this pie for under 8,000 won. It was invented in England in the 70’s, and although the original recipe used a pastry pie base, I feel a biscuit base is just as tasty and so much easier to make. Banoffee is hugely popular in Europe, so much so that Cadburys made a banoffee pie flavored chocolate bar. This pie is wonderful for a birthday party or even if you are just looking to impress your friends. No cooking is involved so no oven is needed.

 Ingredients 
1 can of condensed milk
5 bananas 
2 packets of digestive biscuits 
1 cup of butter 
2 cups of cream
Bring a large pot of water to a boil then add the unopened can of condensed milk to the water. Reduce to a simmer and simmer for 2/3 hours, always checking to see there is plenty of water in the pot. Warning: If the water boils dry the can will explode! 

Crush the digestive biscuits, add melted butter then pack tightly into pie tin and place in the freezer for 30 minutes. When you remove it from the freezer, place a layer of chopped bananas on top of the biscuit layer.

Allow the condensed milk to cool, then pour into the tin over the top of the bananas.

Whip cream (adding a drop of Tia Maria if you like using a food mixer). Then fill half the food mixer with cream and mix again for about 10-15 minutes, or until the cream thickens. The best cream to use is the Seoul Milk brand which has no added sugar. It comes in a small carton with a green label.

Top off the banana toffee pie with the whipped cream. Decorate with some chocolate shavings or chocolate syrup.

Now watch your friends faces light up with joy as they eat your banoffee pie…..YUM !!!!
